Recipe of the Month Baked String Beans Greek-style

2 lbs. string beans
1/2 cup olive oil
2 cups canned stewed tomatoes
1 large or 2 medium onions
3 TBSP chopped fresh parsley
2 or 3 garlic cloves, minced salt and pepper to taste

When preparing the dish you may choose fresh string beans which will cook faster, or you may use frozen string beans. It is also good to know that this dish is best when prepared at least one day ahead of use so that the flavors may permeate the beans better,. Cut off the ends of the beans and wash them in cold water. Cut into pieces or leave whole. Set aside. Heat the 1/2 cup of olive oil in a skillet and sautee onions with garlic, parsley and dill. When onions are partially translucent, remove from heat. Place beans in a large baking pan. Spread the stewed tomatoes on them, then add salt and pepper to taste. Top off with the sauteed onion mix and cover the pan securely with aluminum foil and place in preheated oven of 350 degrees. Bake for at least one hour or until beans are tender.

Jeremiah's Inn Food Drive

Jeremiah's Inn serves both as a residential recovery program for men, and has been an emergency food program which served over 14,000 people in 2007! Each year, Jeremiah's holds a food drive. This year, the drive will be held July 21-26.

You can help Jeremiah's reach its goals of 80,000 pounds of food and/or $12,000 by bringing your canned goods (no glass please) to the Shaw's Truck in Webster Square Plaza.

The Webster House will also be collecting canned goods throughout the month of July. When you drop the food off, we'll give you a coupon for the Webster House!
